POSITION SUMMARY

Oversees and assists all food production, food presentation, and all back-of-the-house activity. Expected to meet or exceed community food service standards at all times, adhering to budgetary requirements, and help manage kitchen operations in a cost effective manner.

ESSENTIAL DUTIES AND RESPONSIBILITIES

The following duties are normal for this position. This list is not to be construed as exclusive or all inclusive. Other duties may be required and assigned.

  • Assists chef with Planning, staffing, organizing and coordinating the preparation of all meals in all levels of care.
  • Helps Planning menus and menu cycles according to cultural and regional food preferences, and resident dietary guidelines. Adjusts recipes to appropriate yield.
  • Assisted living food requirements as it pertains to ACHA standards.
  • Monitors the quality and consistency of the food to include food temperatures, portion control, palatability and attractiveness of food, and implements changes to ensure quality according to established standards.
  • Assists chef with Time clock management as it relates to labor actuals. These are completed on a weekly basis to ensure compliance with budget.
  • Ensures compliance with Resident dietary restrictions.as it pertains to the assisted living facility
  • Observes/and works side by side with workers engaged in preparing, portioning, and garnishing foods to ensure that methods of cooking and garnishing and sizes of portions are as prescribed.
  • Gives instructions to cooking staff in fine points of cooking.
  • Cooks and carves meats, and prepares dishes.
  • Receives and validates all food deliveries against order form.
  • Assists chef with Inventorying food items monthly in our Independent Living facility.
  • Assists chef with Planning, ordering and organizing hurricane supplies for IL facilities
  • Create custom holiday menus
  • Help plan, organize and prepare party’s and events
  • Conducts regular Quality Assurance Audits.
  • Practices safe and sanitary food handling.
  • Ensures all staff is compliant with our Sterotech sanitations modules.
  • Practices all safety and loss prevention procedures.
  • Helps chef Monitor budgeted line items and keeps variance within targeted range.
  • Other duties as assigned.

SUPERVISORY RESPONSIBILITIES

Directly supervises employees in the Kitchen. Carries out supervisory responsibilities in accordance with the organization's policies and applicable laws. Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees.

QUALIFICATIONS

Educational Requirements and Experience:

  • Associate’s degree in culinary arts program preferred.
  • Minimum of three years experience as a Chef/Kitchen Manager in a food service environment.
  • Successful completion of recognized food safety course.

Knowledge, Skills and Abilities:

  • Language Ability:

o Ability to communicate effectively in writing and verbally speaking the primary language of the residents.

o Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals.

o Ability to write routine reports and correspondence. Ability to speak effectively before groups of customers or employees of organization.

  • Mathematical Skills:

o Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals.

  • Cognitive Demands:

o Ability to apply common sense understanding to carry out instructions furnished in written, oral, or diagram form. Ability to deal with problems involving several concrete variables in standardized situations.

  • Computer Skills:

o Ability to use Microsoft Windows, including Word and Excel. Ability to use email and the Internet.

ENVIRONMENTAL ADAPTABILITY

Job Type: Full-time

Pay: $40,000.00 - $45,000.00 per year
